225g short crust pastry (8oz) ( see basic recipie )
2 onions, chopped
25g butter (1oz)
1tsp french mustard (5ml)
4tbsp plain flour (20ml)
1/2 pt single cream (300ml)
50g grated cheese (2oz)
100g sweetcorn (4oz)
1 egg, beaten
salt and pepper
1 yellow pepper, slice in rings
sprig coriander
- roll out the pastry and use a flan ring. place on a baking sheet and chill while making the filling.
- fry the onions for about 5-10 mins until golden and soft, stir in the flour and mustard, then gradually pour in the cream and bring to the boil. stirring all the time.
- reduce the heat and simmer for 2-3 mins until thick. add the cheese, remove from the heat, and cool for 2-3 mins before adding the sweetcorn, egg and seasoning.
- pour into the flan ring and arrange the pepper rings attractively. Bake for 35-40 minutes gas mark6 200 until the filling is set. garnish with coriander
