cheese flan

225g short crust pastry (8oz) ( see basic recipie )
2 onions, chopped
25g butter (1oz)
1tsp french mustard (5ml)
4tbsp plain flour (20ml)
1/2 pt single cream (300ml)
50g grated cheese (2oz)
100g sweetcorn (4oz)
1 egg, beaten
salt and pepper
1 yellow pepper, slice in rings
sprig coriander





  1. roll out the pastry and use a flan ring. place on a baking sheet and chill while making the filling.
  2. fry the onions for about 5-10 mins until golden and soft, stir in the flour and mustard, then gradually pour in the cream and bring to the boil. stirring all the time.
  3. reduce the heat and simmer for 2-3 mins until thick. add the cheese, remove from the heat, and cool for 2-3 mins before adding the sweetcorn, egg and seasoning.
  4. pour into the flan ring and arrange the pepper rings attractively. Bake for 35-40 minutes gas mark6 200 until the filling is set. garnish with coriander
